Crockpot Black Beans

Dried beans have many things to recommend them. They are cheap and easy to fix, especially with a crock pot. They are idiot proof!  Everyone devours these, including the kid.


Crockpot Black Beans (from Feeding My Kid)

1 lb. of dried black beans, soaked in water overnight

1 small ham hock or ham shank

2 bay leaves

1 box of gluten free chicken stock (we use Pacific brand)

Drain the beans and place in a 4 or 6 quart crock pot. Nestle the ham hock in the center of the beans. Add the bay leaves, and pour the chicken stock over the beans. Add enough water to cover the beans and the ham hock. Cook on high until tender enough to smoosh with a fork. Since we live at high altitude, this takes about 8 hours, but may take less time where you live.

Serve over cornbread. Serve the leftovers with rice and salsa for a “burrito bowl.”
