Here are the gingerbread men that we made for Santa. And for us.
I found this recipe after buying a box of Mi-Del Gluten Free Gingerbread Men on our last trip to Whole Foods. Total impulse buy. They were – OK – very, um, crunchy. These, on the other hand are deliciously soft and wonderful. The original recipe is at Elana’s Pantry. She is a miracle worker with gluten free baked goods.
I made a few modifications. First, I made half of a recipe, because we don’t need 36 g-men. I don’t keep yacon syrup on hand, so I substituted a scant 1/4 cup of molasses (again, for a half recipe). Since I haven’t gotten around to buying grapeseed oil, I used canola. And I had no ground ginger, but did have fresh hanging out in the freezer. I didn’t measure, to be honest. I just grated a hefty amount into the mixing bowl. And ours had no lemon zest, but I bet that would taste fantastic.
Hope Santa likes them – we sure do. I am going to have to hide some away to make sure that Santa gets some.
